Kombucha – Brewing

Kombucha is a combination of tea, sugar, bacteria, and yeast. The tea is a probiotic.

DAY 1

Bring home your first scoby and starter tea in a quart glass jar. Place the contents into a gallon glass jar and cover it with cheese cloth. This will allow the scoby to breathe while preventing flies from contaminating the culture during the brewing process. Keep the scoby at room temperature.

Prepare the tea

  1. Bring 3 quarts natural spring water to a boil over high heat (approximately 10-minutes).
  2. Remove from the heat and dissolve 1 cup raw sugar by stirring it until completely dissolved. Note. Refined sugar is not Paleo friendly and the antibacterial properties of honey could damage the scoby. Another slightly more expensive option would be to use coconut crystals.
  3. Add 4 teaspoons (or 4 tea-bags) of either organic black or plain organic green tea. Note. Only brew with black or green tea. Flavorings can be added during the bottling process.
  4. Cover and let sit overnight. Note. The tea must completely cool to room temperature otherwise it could damage the scoby.

DAY 2

  1. Remove the tea bags and gently pour the tea into the gallon glass container with the scoby. Cover with cheese cloth.
  2. Either hand write or print out words of intention for the water such as “Love & Gratitude” and place underneath the glass container. (See the article “Effects of Water“).
  3. Let the tea brew for 14 days.
  4. Put the date on the container that it will be ready for bottling and enter a reminder on your calendar for the ready date as well.
